Prepare the Filling

Spoon the chocolate protein pudding onto a sheet of parchment paper, dividing it into 3 small circles.

Freeze until firm enough to peel off the parchment paper in one piece.
Make the Batter

Separate the eggs. Beat the egg whites until stiff peaks form and set aside.

In another bowl, combine the egg yolks with the flour, whey protein, cocoa powder, erythritol, baking powder, and almond milk. Mix until smooth.

Gently fold the whipped egg whites into the batter.
Cook the Pancakes

Pour about one-sixth of the batter into a small non-stick pan.

Place one frozen chocolate pudding disc in the center and gently press it down.

Cover with another one-sixth of the batter.

Cook over low heat for about 5 minutes per side until the pancake is fully cooked.

Repeat the process two more times with the remaining batter and filling.
