Separate the eggs. Beat the egg whites until stiff peaks form.
In a separate bowl, combine the egg yolks, flour, whey protein powder, baking powder, and almond milk. Mix until smooth.
Gently fold the whipped egg whites into the batter, taking care not to deflate the mixture.
3 Step 3

Heat a non-stick pan over low heat. Add about 2 tablespoons of batter to the pan.
Place one frozen portion of vanilla pudding in the center and cover it completely with additional batter.
4 Step 4

Cook over low heat for about 5 minutes per side, or until golden brown and cooked through.
Repeat with the remaining batter and filling. Serve warm and enjoy the creamy vanilla center.
