Make your own lemon macarons with this easy-to-follow recipe. Featuring almond shells with a vibrant yellow hue and a creamy lemon ganache filling, these macarons are as stunning as they are delicious. Perfect for citrus lovers!
Combine powdered sugar and ground almonds in a bowl. Blend the mixture thoroughly, then sift it at least twice to ensure a fine texture.
Weigh the egg whites carefully, as accuracy is crucial for the perfect consistency. Whisk the egg whites until foamy, then gradually add the sugar while whisking. Continue until stiff peaks form. Add food coloring and whisk for another minute.
Gradually fold the almond mixture into the whipped egg whites in three additions. Be gentle to avoid deflating the batter. Stop folding when the mixture becomes sticky and flows like lava.
Transfer the batter to a piping bag. Pipe 2cm circles onto a silicone mat or parchment paper. Tap the baking sheet twice on the counter to remove air bubbles. Let the shells rest for 30 minutes until a slight skin forms.
Preheat the oven to 150°C (300°F) with upper-lower heat. Place the macarons in the oven, reduce the temperature to 145°C (293°F), and bake for 12-14 minutes. Let the shells cool completely before removing them from the mat or paper.
Finely chop the white couverture chocolate and place it in a heatproof bowl.
Heat the heavy cream until just warm, then slowly pour it over the chocolate in small amounts, stirring until the chocolate melts completely.
Add cold butter to the mixture, blending until smooth.

Grate the zest of one lemon and stir it into the ganache. For extra lemony flavor, add a few drops of lemon juice to the inside of the macaron shells before assembly.
Refrigerate the ganache for at least 30 minutes. Once chilled, whip it until light and fluffy.
Pipe a dollop of ganache onto one macaron shell and sandwich it with another.
Enjoy these citrusy delights as a treat for yourself or share them with loved ones!
