Make the Pesto

Toast pine nuts in a dry pan until golden.
Pluck the basil leaves and blend them with grated Parmesan, toasted pine nuts and a pinch of salt.
Gradually add olive oil, blending until smooth. Adjust the consistency with water if needed.
3 Prepare the Baguette

Slice the baguette in half and drizzle with olive oil. Toast in a pan until lightly golden.
4 Assemble the Sandwich

Spread pesto on one half of the baguette. Layer arugula, burrata (pulled apart to cover the bread) and chili oil if desired. Add the warm tomato filling and finish with balsamic glaze. Close the sandwich and enjoy!
