Step 1

Dice the chicken breast. Heat olive oil in a large skillet or pot, then add the chicken and sauté for 2–3 minutes.
Add the sun-dried tomatoes, garlic and spices. Stir well and cook for another 3–4 minutes.
2 Step 2

Pour in the broth and add the rice noodles. Cover the skillet and bring to a boil, then reduce the heat to medium and let simmer for 12 minutes.
3 Step 3

Stir in the cream and fresh spinach, cooking for another minute. Sprinkle with parmesan cheese, mix and serve hot.
