  • 45 g ground almonds
  • 75 g powdered sugar
  • 36 g egg whites (approx. 1 large egg)
  • 10 g granulated sugar
  • Pink or red food coloring
  • Ingredients for Ganache
  • 100 g white chocolate
  • 50 ml raspberry puree (approx. 70g)
  • 1 of Juice lime
Instructions
  1. Step 1

    Mix the powdered sugar and ground almonds, then blend the mixture until smooth. Sift it twice to achieve a fine consistency.

    Weigh the egg whites precisely and whisk until foamy. Gradually add the sugar and beat until stiff peaks form. Add food coloring and whisk for another minute.

    Gently fold the almond mixture into the egg whites in three additions until a sticky batter forms.

    Pipe 2cm-wide circles onto a silicone mat or parchment paper. Tap the baking tray twice to release air bubbles. Rest for 30 minutes.
