  1. In a bowl, whisk together eggs, flour, quark, Erythritol and almond milk until smooth.

  1. Divide the batter into three equal portions (about 100 g each).

    Mix cocoa powder into one portion and matcha powder into another (add food coloring for more vibrant colors if desired).

  1. Pour about 50 g of batter into a hot pan, spread it thinly, and let it set briefly.

  1. Meanwhile, prepare the filling by mixing quark, cream cheese, cream powder and white chocolate flavor. Add a little water to achieve a creamy consistency.

  1. Place two crêpes slightly overlapping on a flat surface, spread the filling in the center and top with crumbled Oreo, strawberry slices and mango pieces.

  1. Fold the sides towards the center to create a rectangle, then carefully roll it up.
