Ingredients
1 chicken breasts
1tbsp pesto
25g sun-dried tomatoes
40g mozzarella
15g baby spinach
1tbsp olive oil
salt
pepper
paprika powder
Instructions
Slice the chicken breasts horizontally, creating a pocket, but keep the halves attached.
Spread pesto inside the chicken breasts. Slice the mozzarella and layer it with sun-dried tomatoes and baby spinach inside.
Close the chicken breasts and secure them with toothpicks.
Heat olive oil in a pan. Place the chicken in the pan, season with salt, pepper and paprika powder and sear on both sides.
Transfer to a preheated oven at 220°C (430°F) and bake for 20 minutes.
