Preheat your oven to 180°C (fan setting) and line a baking dish (approx. 15x20 cm) with parchment paper.
Melt the butter in a saucepan and let it cool slightly. In a bowl, combine all other ingredients (except chocolate chips) with the butter and knead into a dough. Fold in the chocolate chips. Set aside.
Melt the butter and chocolate separately, then mix together with cocoa powder, oil and vanilla extract until smooth.
In a separate bowl, beat the eggs and brown sugar until fluffy (about 3–6 minutes), then slowly add the white sugar while continuing to beat. Gently fold in the egg mixture and flour into the chocolate mixture.
Tear the cookie dough into small chunks. Alternate spoonfuls of cookie dough and brownie batter into the baking dish. Sprinkle the remaining chocolate chips on top.
Bake for 40–45 minutes. Let the brookies cool completely before removing from the pan. Slice into 12–16 pieces and enjoy!
